A pig engineered to solve an organ shortage may have accidentally cured a modern food allergy. Six weeks after the first successful pig kidney transplant at NYU Langone Health, scientists realized their GalSafe pigs could also feed the growing number of people allergic to red meat.

The allergy stems from a Lone Star tick bite. When the tick feeds, it injects Alpha Gal sugar into the skin alongside its saliva. Dr. Thomas Platts-Mills discovered this after tracing anaphylactic reactions to the cancer drug Cetuximab, which contains the same sugar. His self-experiment - exposing himself to 200 seed ticks - confirmed the link.

Now, Revivicor’s pigs are bred without the gene that produces Alpha Gal. No sugar, no immune trigger. Chief Scientific Officer David Ayers said the company shifted toward food production after hearing stories like Amy Pearl’s on Radiolab. They slaughtered their first pig for meat just weeks after the second kidney trial.
